One of special techniques of using a Japanese kitchen knife is called “Nimai-biki”, which you will see on the video as follow.

The restaurant on the video, “Ajidokoro IZUMI”, is one of the classy and fancy restaurants in Hakata, Fukuoka.

The professional chef slices globefish with the finely honed Japanese knife.

A slice of globefish cut by him is incredibly thin so that you can look through the other side.
